Kohlrabi and apple salad with mustard dressing

Ingredients

3 tablespoons olive oil
2 tablespoons white wine vinegar
1 tablespoon Dijon mustard
Salt and freshly ground black pepper
21medium kohlrabi or 1 medium celeriac, peeled, thinly sliced
2 small heads little gem, torn into bite-size pieces (about 6 cups)
1 crisp red apple (such as Crimson Crisp), thinly sliced
4 tablespoons chopped fresh chives, divided

Directions

Step 1 Whisk oil, vinegar, and mustard in a large bowl; season with salt and pepper. Step 2 Add kohlrabi, frisée, apple, and 2 Tbsp. chives to bowl with dressing and toss to coat; season with salt and pepper. Step 3 Top salad with remaining 2 Tbsp. chives just before serving.

Fantastic first veg box. Never had veggies so fresh. The salad was so crunchy, nothing like store bought stuff. Cannot recommend this box enough and can't wait to receive my next one
