For the Bowl:
·Extra virgin olive oil, in a mister
·1 sweet potato, sliced into rounds
·1/4 red onion, sliced
·1 cup zucchini, sliced
·1.5 cups cooked chickpeas, patted dry to remove moisture
·1 teaspoon curry powder
·1/2 teaspoon turmeric
·1 lime
·5 cups stemmed kale, chopped
·Fresh parsley, roughly chopped
·Sea salt & ground black pepper, to taste
Garlic Tahini Sauce:
·1 lime, juiced
·2 tablespoons tahini
·2 garlic cloves
·2 tablespoon water, plus more for thinner consistency
